The yellow surface consists of titanium aluminum nitride which greatly prolongs the life of the sharpener.
You use the yellow diamond whetstone (25 microns) in forming a new, thinner edge, the white ceramic whetstone (9 microns) for polishing the edge. You can polish the edge several times before you start using the diamond stone.The whetstone comes with an instruction in English on how to use it. For cleaning, use some washing-up liquid and hot water. Regarding cleaning the ceramic stone, try an eraser or warm water and some washing-up liquid. Like all diamond sharpeners, this whetstone is a bit rough at first but gets smoother after a period of use.
